I know that soups are usually a winter food, but I love taco soup year round. It is one of my favorite things to make because after I cook the meat, I just throw it all in the crockpot and leave it. I use ground chicken in mine. You could do ground beef or even ground turkey, but I'm not really a fan of ground turkey so I just stick with chicken or beef. Honestly I use whichever one I have in the freezer. I try to always keep one of each. For seasonings I use one taco seasoning packet and one ranch dressing packet. For canned ingredients I use original rotel, corn, tomato sauce, and kidney beans. The best part about this is you can add or take away any of these ingredients and customize them to you and your family. If you like things a little spicy you can even do a medium or hot rotel. I am not a big fan of spicy food so that's why I just do the original. My husband is, so sometimes he will add some sriracha to his.
I start off by cooking the ground chicken. After that is cooked I add it to the crockpot and then I add the rest of the ingredients. I always drain and rinse the can items that have liquid just to kind of wash the "can" taste off. After all the ingredients are in the crockpot I will use the tomato sauce can to add a little bit of water, and then I will stir it all together. You can add as much water as you would like. I know everybody likes different soup consistencies. I usually turn my crockpot on high and let it cook for about 2 hours. You don't have to leave it on for that long since it's on high, but that's usually what I do. Sometimes I will just do about an hour and a half. Honestly it depends on how hungry I am, haha.
When it is done I will put it in a bowl and usually add shredded cheese and tortilla chips to mine. There are so many toppings you can do, I'm just picky. Toppings are another thing you can customize for your taste.
